The holidays wouldn’t be the same without creamy, decadent mashed potatoes. But creamy and decadent, doesn’t have to mean high in calories. In search of a velvety smooth mashed potato recipe, without the excess of calories, I discovered crème fraîche and I haven’t made mashed potatoes the old fashioned way since. Crème fraîche is the perfect tangy substitute for the usual overload of heavy cream, butter and salt that is used in most traditional mashed potato recipes.
Crème fraîche, originally made in France, is like a less sour, slightly thicker version of sour cream. With no ingredients added and at just 55 calories per tablespoon, this substitution packs a serious flavor bang for your calorie buck. So give crème a try this holiday season. Your friends and family will be pleasantly surprised and so will their waistlines!

Crème Fraîche Mashed Potatoes
Ingredients
1 lb Yukon Gold Potatoes peeled and cut into wedges to facilitate ricing
¼ cup non-fat half and half
¼ cup crème fraîche
1 tablespoon Balade light butter
1 small bunch of fresh chives finely chopped (optional, but I added them because I have a plethora growing in my window sill)
Preparation
Boil water (enough to cover potatoes) with a couple pinches of sea salt, in a medium sized pot. Cook potatoes until tender and then drain. Using a ricer (to obtain the smoothest consistency) press potatoes into the pot used to boil the potatoes which will keep them warm.
While the potatoes are boiling heat the half and half, crème fraîche and butter over medium low heat until the combined mixture begins to bubble at the edges. Remove from heat.
Mix warm milk/creme/butter concoction into potatoes gradually and then fold in fresh chives. Season with salt and pepper to taste.
